Summer's menu is one of my favorite things! Fresh fruit and light salads paired with grilled meats and veggies make this girl happy. We practically live at the pool all summer, so quick, easy dinners are a must. Lighter, simpler food is what summer means to me.

We love to grill at our house. It's quick, easy, and my kids always devour it! I try to keep marinades stocked in the cabinet, but sometimes I forget to buy them and I'm stuck in a pinch.
I've finally found a homemade marinade that beats any store-bought one I've ever tasted. It's so good, and I almost always have the ingredients on hand, so it's always an option!
Tasty food I already have in my kitchen? That's a win-win if I've ever heard of one. This post contains affiliate links for your convenience. See my full disclosure policy here.
What You'll Need for Citrus Chicken Marinade

- 3/4 cup olive oil
- 1/2 cup soy sauce
- 1 TBSP grated onion (my zester is perfect for this step!)
- Juice of 1 lemon
- 1 drop of Ginger Vitality essential oil (I buy my 100% pure essential oils only from here.)
- 2 drops of Lime Vitality essential oil
- 2 drops of Orange Vitality essential oil
See how simple it is? You're going to love the flavor! So yummy!!

Mix all the ingredients together and pour over your chicken. I used 4 chicken breasts, and there was plenty of liquid to cover them all.

Make this recipe 1-4 hours before cooking so the chicken can marinate. More time means more flavor! I didn't let mine marinate very long, and I look forward to giving it more time next time. It's so delicious!

Then just grill it. My husband is the grill master in our family. He cooks each side for 3-5 minutes, depending on the thickness of the chicken breasts, and he only flips them once. I've heard some people flatten the chicken so it's all the same thickness. I do that sometimes, but most of the time I'm just lazy. We leave the larger pieces on the grill a little longer.

Baste the chicken with extra marinade when you flip it, then toss out whatever marinade is left.
I'll say Coach has gotten really good at cooking them to perfection. We let them rest for about 5 minutes before serving.

I served the chicken with corn on the cob and a fruit salad, on a bed of spinach. It was a light, easy meal, perfect for summer.

The citrus and ginger flavors were delicious, and I'll be making this again and again.
