I decided to make a Valentine's Day cookie cake for our special dessert this year! I wasn't planning on making a dessert, but I needed to practice before my husband's birthday next week.
You see, he's had a cookie cake for his birthday ever since he was a little kid. I'd never bought a cookie cake before I married him. Do you know how expensive they are!?!

Well, since I'm queen cheap, I asked my sister-in-law to make one for him last year. It was delicious! He loved it more than the store-bought kind.

This is the one she made for him several years ago. She's very talented!
So I decided this year I'd make one for him. I made this Valentine's Day cookie cake as a practice run.

I think I did a pretty good job with this one, so I'll attempt the birthday cake. Even if it's not as pretty as a store-bought one, it's the thought that counts, right?

I won't tell you how little time it takes us to eat a whole cookie cake. It's just so easy to grab a bite every time you walk past. I'll eventually cut it into pieces and put it in a container to keep us from eating it all. the. time!

Lucky for you, my sister-in-law shared her cookie cake recipe with me, so I've written the recipes down for you here! Her butter cream icing is to die for, too.

The cookie cake and butter cream icing are both sooooo delicious!

Equipment
- Mixer
- Mixing Bowl
- 12 in round pan (or any other pan you like, with sides)
- Spatula
- Parchment Paper
- Cookie Sheet (or something flat and big enough to hold the whole cookie)
- Cookie Cake Plate or cardboard covered in foil, etc. for storing
Ingredients
- 1 cup butter, softened and slightly melted
- 1 cup white sugar
- ½ cup packed light brown sugar
- ½ cup packed dark brown sugar
- 2 eggs
- 2 tsp vanilla extract
- 1 tsp baking soda
- 2 tsp hot water
- ½ tsp salt
- 2 ¾ cup all-purpose flour
- 1 ¾ cup milk chocolate chips
Instructions
- Preheat the oven to 350.
- Lightly grease a 12" round cookie pan and line the bottom with parchment paper.
- In the mixer, cream together the butter, white sugar and brown sugar until smooth.
- Beat in the eggs one at a time.
- Stir in the vanilla.
- Dissolve the baking soda in the hot water, then add it to the batter.
- Add the salt and mix well.
- Mix in the flour.
- Stir in the chocolate chips.
- Press your cookie dough into the parchment-lined pan until it's about ½ inch high. I laid a piece of parchment paper over the dough before pressing it down with my hands to make it look even! Be sure to peel the parchment paper off the top before it goes in the oven.
- Bake for 20-22 minutes. The cookie cake is done when the top is golden brown.
- Let the cookie cake cool for 15 minutes.
- Then place the large cookie sheet over the top of the cookie cake. Carefully flip it over onto the cookie sheet. Peel the parchment paper off the bottom.
- Next, set your cake stand or cardboard on the cookie cake and flip it over again. Now you're ready to decorate your cake!
