The mix of strawberry, pineapple and coconut in this lava flow cocktail will make you feel like you're on a beach swing overlooking the ocean. It's a tropical classic you'll want to sip all summer long!
For the record, I'm not much of a drinker. I might have a glass of wine now and then and enjoy a fun cocktail on vacation. And I'm by no means an expert at mixing drinks. But last summer I ordered a coconut, pineapple and orange drink at a local restaurant and tried it. It was the height of summer, and it tasted like a beach vacation.

So I set out to recreate the drink at home, because it was THAT good. I'm a sucker for anything with coconut cream, and this drink had plenty, so I was instantly drawn to it. LOL (It's like how I order a coconut cream pie snow cone from the truck and ask Sonic to add their coconut cream syrup to my Diet Cokes. It's called a Dirty Diet Coke. Look it up, they're SO good.)
But I digress. I'm just saying my love of all things coconut cream has led me to this point. LOL
Since last summer, I've discovered a twist on my orange/pineapple/coconut drink. (I don't know what to call it, so if you have name suggestions, let me know in the comments.)

This new-to-me drink is similar to last year's, except this one has strawberries and a fun name: the Lava Flow! How adorable is that?!? It's not only pretty, it tastes like an all-inclusive beach resort with those cool swinging beds and flags you raise for the waiter. You know what I'm talking about?? (I'm pretty sure it's the Malibu coconut rum.)
So since I'm not going on a beach vacation this year, I'm ordering myself a dozen rounds of this drink and sipping it by the lake with my friends. Ha!
How do you make a Lava Flow Cocktail?
The essential "lava flow" effect requires making two separate frozen mixtures, then pouring them together into one glass. The strawberry mixture has light rum and Malibu rum in it. The pineapple mixture has coconut cream syrup, pineapple juice and crushed ice.
Blend the frozen strawberries and rums first until smooth. Then set the strawberry puree aside and rinse out the blender. Blend the cream of coconut (my favorite!), pineapple juice and crushed ice until smooth. Pour each mixture into 4 glasses and you're done! It's very simple to make and so yummy!

Variations of a Lava Flow Cocktail
- Some recipes call for adding a small banana. If I were adding one, I'd blend it into the pineapple mixture. It would definitely enhance the tropical flavor.
- I made a virgin lava flow smoothie for my kids by swapping the rum for pineapple juice, and they loved it!
