I've made these for pool parties and holiday cookie swaps. They're so versatile and genuinely loved all year round! I took some to a pool party just yesterday, and they were gobbled up fast. You see, I have to make them only for special occasions like that, because if I keep them around the house, I'll eat them all!

Honestly, I remember eating Hello Dolly Bars as a little girl, but I can't remember where. I don't think my mom made them, because the recipe isn't in our family recipe book.

Side note for a great gift idea: Several years ago my mom gave all of us girls (my sisters-in-law and me) a family cookbook. She collected our favorite family recipes, made them look pretty in Word, printed them, and slid them into protective sleeves in a 3-ring binder. It's one of the best gifts I've ever received, and I use it daily. I'll make them for my girls one day and add this recipe for sure!

I searched the internet for a good recipe and tried several before I found one I loved. I tweaked it to make it my own, and I hope you'll enjoy it too! Also, this takes about 5-10 minutes to throw together. It's such an easy dessert when you have lots of little ones and are short on time.

Tools Needed

  • 9 x 13 pan
  • aluminum foil
  • ziplock bag or food processor
  • Small mixing bowl

What You'll Need

  • 2 cups graham cracker crumbs, crushed (~10 crackers)
  • ½ cup butter, melted
  • 1 cup semi-sweet chocolate chips
  • ½ cup butterscotch chips
  • 1 cup pecan halves
  • 1 cup sweetened shredded coconut
  • 14 oz. can of sweetened condensed milk
  • cooking spray

Directions

  • Line a 9×13 pan with aluminum foil and lightly coat it with cooking spray
  • Put the graham crackers in a Ziplock bag or food processor and crush them. Then transfer them to a small bowl.
  • Melt the butter and stir it into the graham cracker crumbs until evenly combined.
  • Press the graham cracker mixture into the bottom of the 9 x 13 pan.
  • Evenly scatter the chocolate chips, butterscotch chips, pecan halves, and shredded coconut over the crust.
  • Drizzle the sweetened condensed milk evenly over the top.
  • Bake for 25-30 minutes at 325°. I set my oven for 25 minutes, then add an extra minute, watching closely until the edges are golden brown, the middle is bubbly, and the coconut is slightly browned. Be careful not to burn the coconut, because it can happen very quickly.
  • Let them cool until the chocolate and butterscotch are no longer gooey. Then cut into bars. It makes about 20 bars.
  • These will stay fresh in an airtight container at room temperature for 3-4 days, or in the refrigerator for up to a week.

You can play around with the toppings. I've seen variations with white chocolate chips, almonds, walnuts, raisins, and even Rolos candy! It all sounds delicious, and I plan to experiment more the next time I make them.

I hope you enjoy!
