Equipment

  • Aluminum foil
  • Ziplock bag or food processor (for crushing crackers)
  • Small mixing bowl

Ingredients

  • 2 cups graham cracker crumbs, crushed (about 10 crackers)
  • ½ cup butter, melted
  • 1 cup semi-sweet chocolate chips
  • ½ cup butterscotch chips
  • 1 cup pecan halves
  • 1 cup sweetened shredded coconut
  • 14 oz. can sweetened condensed milk
  • Cooking spray

Instructions

  1. Line a 9×13 pan with aluminum foil and spray lightly with cooking spray.
  2. Place graham crackers in a zip-top bag and crush with a rolling pin, or pulse in a food processor. Transfer crumbs to a small bowl.
  3. Melt the butter and stir into the graham cracker crumbs until evenly combined.
  4. Press the graham cracker mixture firmly into the bottom of the prepared pan to form the crust.
  5. Evenly layer the chocolate chips, butterscotch chips, pecan halves and shredded coconut over the crust.
  6. Drizzle the sweetened condensed milk evenly over the top, covering the layers.
  7. Bake at 325°F for 25–30 minutes. I start at 25 minutes and then watch closely—edges should be golden, the middle bubbly and the coconut lightly browned. Be careful not to burn the coconut; it can brown quickly.
  8. Let cool until the chocolate and butterscotch are no longer gooey, then lift from pan using the foil and cut into bars. This recipe yields about 20 bars.
  9. Store bars in an airtight container at room temperature for 3–4 days or refrigerated for up to one week.

Tips and Variations

These bars are very adaptable. Swap the chocolate chips for white chocolate, try almonds or walnuts instead of pecans, or add chopped candy like Rolos for a gooey surprise. For a nut-free version, omit the pecans and increase the coconut or add extra chips. Press the crust firmly so the bars hold together when cut.

Serving Suggestions

Cut into squares and serve at room temperature with coffee or milk. They also pair nicely with a scoop of vanilla ice cream for a decadent dessert.

Storage

Keep bars in an airtight container at room temperature for 3–4 days. Refrigerate for up to a week if you prefer a firmer texture.
