Ingredients

  • 1 cup butter, softened and slightly melted
  • 1 cup white sugar
  • ½ cup packed light brown sugar
  • ½ cup packed dark brown sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 tsp baking soda
  • 2 tsp hot water
  • ½ tsp salt
  • 2 ¾ cups all-purpose flour
  • 1 ¾ cups milk chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Lightly grease a 12-inch round cookie pan and line the bottom with parchment paper.
  3. In a mixer, cream together the butter, white sugar, and both brown sugars until smooth and well combined.
  4. Beat in the eggs one at a time, mixing until incorporated.
  5. Stir in the vanilla extract.
  6. Dissolve the baking soda in the hot water, then add it to the batter and mix briefly.
  7. Add the salt and mix well.
  8. Fold in the flour until the dough comes together, then stir in the milk chocolate chips.
  9. Transfer the cookie dough into the parchment-lined pan. Press the dough evenly into the pan until it’s about ½ inch thick. To get a smooth surface, place another piece of parchment over the dough and press down gently with your hands or a flat object, then remove the top parchment before baking.
  10. Bake for 20–22 minutes, or until the top is golden brown and set at the edges. The center should still be slightly soft for a chewy texture.
  11. Allow the cookie cake to cool in the pan for about 15 minutes.
  12. Place a large cookie sheet or flat board over the top of the pan. Carefully flip the pan so the cookie cake transfers onto the sheet. Remove the parchment from the bottom.
  13. Place your cake stand or a covered piece of cardboard on the cookie cake and flip it again so it’s right-side up and ready to decorate.

Serving and Decorating

Once the cookie cake is cooled and flipped right-side up, you can decorate it as you like. A smooth buttercream frosting is classic and easy to pipe messages or borders with; alternatively, use chocolate ganache, frosting swirls, or a dusting of powdered sugar. If you’re adding elaborate frosting, make sure the cookie is fully cooled so the frosting holds its shape.
