The blend of strawberry, pineapple and coconut in this Lava Flow Cocktail will transport you to a beachside swing overlooking the ocean. This tropical classic is refreshing, visually stunning, and perfect for summer gatherings.
I’m not a big drinker, but I love a fun cocktail on vacation. Last summer I tried a coconut-pineapple-orange drink at a local restaurant and it tasted exactly like a beach getaway—so I set out to recreate it at home. I’m a sucker for anything with coconut cream, and that discovery led me to this version with a strawberry twist: the Lava Flow Cocktail.

This version replaces orange with strawberries, creating a beautiful “lava” effect when the two frozen mixtures are poured together. It’s bright, fruity, and tastes like an all-inclusive resort—complete with the coconut rum you often find in those poolside drinks.

How do you make a Lava Flow Cocktail?
The signature lava effect comes from blending two frozen mixtures separately and pouring them together. One mixture is strawberry and rum; the other is a creamy pineapple blend. When layered, the strawberry puree sinks and swirls into the lighter pineapple-coconut mixture, creating the dramatic lava flow appearance.
Basic process overview:
- Blend frozen strawberries with light rum and coconut rum until smooth; set aside.
- Rinse the blender, then blend cream of coconut, pineapple juice and crushed ice until smooth.
- Divide the pineapple-coconut mixture among glasses, then pour the strawberry mixture on top so it flows and creates the lava effect.

Variations of a Lava Flow Cocktail
- Banana: Some recipes add a small banana to the pineapple-coconut blend. This enhances creaminess and tropical flavor—add the banana with the pineapple juice and cream of coconut.
- Virgin version: Replace the rums with extra pineapple juice (or a mix of pineapple and coconut water) to make a kid-friendly lava flow smoothie that keeps the same layered look and tropical taste.
- Alcohol adjustments: Use more or less rum to taste, or substitute with flavored rum to vary the profile. Adjust crushed ice for texture.

Course: Drinks — tropical cocktail
Ingredients
- 4 oz light (white) rum
- 4 oz coconut rum
- 10 oz frozen strawberries
- 8 oz pineapple juice
- 8 oz cream of coconut
- 2 cups crushed ice
- Pineapple wedges for garnish
Instructions
- Place the frozen strawberries, light rum and coconut rum in a blender. Blend until completely smooth and pour the strawberry-rum puree into a separate container. Rinse the blender to avoid coloring the next mixture.
- Add pineapple juice, cream of coconut and crushed ice to the blender. Blend until smooth and creamy.
- Pour the pineapple-coconut mixture evenly into four chilled glasses, leaving room at the top for the strawberry puree.
- Spoon or pour the strawberry mixture gently over the pineapple mixture in each glass. The red strawberry puree will sink and swirl through the lighter pineapple-coconut layer, creating the lava flow effect.
- Garnish with pineapple wedges and serve immediately with straws or cocktail picks.

Tips for the best Lava Flow Cocktail
- Use well-frozen strawberries so the strawberry puree is thick and sinks properly into the pineapple-coconut blend.
- Chill glasses ahead of time to keep the layers distinct longer.
- Adjust sweetness by choosing a sweeter or lighter cream of coconut, or add a splash of simple syrup if needed.
- For a slushier texture, add more crushed ice to either mixture and blend to your desired consistency.
This Lava Flow Cocktail is an easy showstopper—perfect for summer parties, lake days, or anytime you want a tropical escape at home. Try the virgin version for kids and non-drinkers so everyone can enjoy the layered, fruity fun.
